drive by wire 300 Tdi swop

Right, as the Hybrid's build is very slowely progressing, another project just arrived.

I need to fit a 300 Ex. disco with ZF mounted to it into a 110 with a to be rebuild 300 Tdi.

Obviously, the flywheel needs to be replaced as the 110 is a manual one.

The injector pump on the "new to me engine" is drive by wire.

Am I right in thinking I can swop the top bit on the injector pump to make it drive by cable ?

I think so, but if not, you could swap the pumps over.

Still a different thing. I only remember a throttle cable with a TPS on top of it. Hence my question, was there a 300TDi without a throttle cable but with an actuator?

Yes, I think so, the TPS version was the EGR-equipped vehicles, and then the EDC is the pump fitted to auto Discos, which you can 'tune' with a 'chip', so must do more than just have a TPS:

Yep.  My RRC has an EGR equipped 300Tdi - it has a sensor, seemingly like a potentiometer, fitted over the throttle quadrant and wired to the EGR solenoid.  It has nothing to do with commanding throttle positions; it just commands the solenoid to close the EGR valve as the throttle is opened.
