Hi

The temprature of your oil and water will be affected by the ambient temprature out side. So say it was 23 C out side temp and your gauge read 110 C for your oil then you would have a rise over ambient of 87 C. This is the temp value you should take note of. As for your water temp i would say that is about right. Your oil temp does seam high tho. Alltho oil does not boil it starts to break down and also becomes thinner the hotter it gets this may cause damage to your engine. Have you changed any of the fan insataltion on your engine. As some fans are used not only to cool the radiator but to pull or push hot / cold airover the engine to cool the engine oil. You can get hold of data sheets for different grades of oil witch tell you what tempratures the will operate at ie max and min temps.
