Try changing the sender and see if that fixes it, it may be just over-sensitive to oil pressure fluctuations. 300Tdi senders are useless, I have had about 10 new ones in my 90 under warranty because they break as soon as they get wet. 200Tdi ones are better but it is a relatively cheap and easy place to start just to rule it out!

How much oil is plenty? Just that the dipstick tube may have been fitted too far in and give a false reading. Try draining the oil and the re-filling with the correctly measured amount so that you are certain. The symptoms are classic low oil.
