BogMonster
Try changing the sender and see if that fixes it, it may be just over-sensitive to oil pressure fluctuations. 300Tdi senders are useless, I have had about 10 new ones in my 90 under warranty because they break as soon as they get wet. 200Tdi ones are better but it is a relatively cheap and easy place to start just to rule it out! western
clean the spade terminal on the switch & tighten the wire connection by giving it a squeeze with pliers, it sorted mine out.
GBMUD
How much oil is plenty? Just that the dipstick tube may have been fitted too far in and give a false reading. Try draining the oil and the re-filling with the correctly measured amount so that you are certain. The symptoms are classic low oil.
